Spicy Potato Curry Recipe

Spicy Potato Curry Recipe

Spicy Potato CurryPrep Time: 10 mins

Ingredients:


Potatoes - 2 (peel the skin and cut into big chunks)

Red onion - 1 (medium size) - chopped very finely

Tomatoes - 2 - chopped very finely

Garlic - 3 cloves

Tamarind - a small lemon sized

Butter - 2 tsp's


For Tempering:


Sesame oil - 4 tbsp's

Mustard - 1/2 tsp

Fenugreek seeds - 1/4 tsp

Asafoetida powder - 1/4 tsp

Dry Red chilly - 3

Curry leaves - 10


List of Powder's:


Turmeric Powder - a pinch

Chilly Powder / Sambhar powder / Kuzhambu milagaai thool - 1 tbsp

Corriander Powder - 2 tbsp's

Cumin Powder - 1/2 tsp

Curry Leaves Powder - 2 tsp's (Optional)

Pepper Powder - 1/2 tsp


Method:


Soak tamarind in 1/4 cup of warm water for about 10 mins. then squeeze the tamarind pulp out and get the tamarind water ready.


In a thick bottomed pan, heat 4 tbsp's of oil. add mustard. when it crack's add fenugreek seeds, curry leaves, garlic, red chilly and asafoetida powder. fry them for few seconds till the garlic gets sauteed.


Now add finely chopped onions, saute them till they turn translucent. add finely chopped tomatoes. saute the tomatoes along with onions, till they mix up along. You got to saute for at least 3-4 minutes, till they mix up.


Add salt to taste and all the powder's mentioned in the order. fry them well for 2 mins, till the oil comes out on the sides of the pan.


Now add chopped potatoes and mix them well with the masala's.


Add tamarind water and mix well with the potatoes. close the pan with its lid. let the flame be low so that the potatoes get cooked in.


After 5 minutes, open the lid, add the butter mix the curry well. add little water, as per the consistency you require and mix well. close the lid.


After 5 minutes, the potatoes would have cooked. you can check that by inserting a knife into the potato. if the potatoes are not cooked, cook for another 5-10 minutes and remove from flame. Now the spicy potato curry is ready.

கத்தரிக்காய் மிளகு கறி ஒரு சுவையான டிஷ்.

கத்தரிக்காய் மிளகு கறி ஒரு சுவையான டிஷ். சூடான ரைஸ் உடன் பரிமாறவும்.

தேவையான பொருட்கள்


கத்தரிக்காய் – அரை கப் (நறுக்கியது)

தேங்காய் எண்ணெய் – இரண்டு தேகரண்டி

வெங்காயம் – ஒன்று (நறுக்கியது)

உப்பு – தேவைகேற்ப

பூண்டு – இரண்டு பல்

மஞ்சள் தூள் – சிறிதளவு

தேங்காய் பால் – முக்கால் டம்ளர்

கரிவேபில்லை – சிறிதளவு

அரைக்க:


பூண்டு – நான்கு பல்

மிளகு – ஒன்று கால் டீஸ்பூன்

சீரகம் – ஒரு டீஸ்பூன்

முன்றையும் விழுதாக அரைத்து கொள்ளவும்.

செய்முறை

கடாயில் தேங்காய் எண்ணெய் ஊற்றி காய்ந்ததும் வெங்காயம், உப்பு, மஞ்சள் தூள், பூண்டு, கத்தரிக்காய் சேர்த்து நன்றாக வதக்கவும்.

பின், அரைத்த விழுது சேர்த்து கிளறி சிம்மில் வைத்து எட்டு நிமிடங்களுக்கு நன்றாக வேகவிடவும்.

பிறகு, தேங்காய் பால் சேர்த்து மூன்று நிமிடம் கழித்து கிரேவி பதம்வந்ததும் கரிவேபில்லை போட்டு இறக்கவும்.

dahi aloo recipe | dahi wale aloo recipe | dahi aloo ki sabzi  an yoghurt or curd based curry or sabzi ideal for those with special dietary requirements of no onion, no garlic and even no tomatoes. it can be easily prepared within minutes with the boiled aloo and served for lunch or dinner. more frequently dahi aloo ki sabzi is prepared during fasting season of navaratri or other festival seasons.


potato based curries are always a huge hit in my house, especially the sambar, raita or simple sabzi are most preferred one.

Serves: 4 Servings
 
Ingredients 

  • 1 tbsp ghee / clarified butter
  • 1 bay leaf / tej patta
  • ½ tsp turmeric / haldi
  • 1 tsp jeera / cumin
  • 1 inch ginger, finely chopped
  • ½ tsp coriander powder
  • 1 green chilli, slit
  • 1 tsp kashmiri red chilli powder / lal mirch powder
  • 2 large potato, boiled and cubed
  • 1 cup water
  • 1 cup curd / yogurt, whisked
  • ½ tsp salt
  • ½ tsp garam masala powder
  • 1 tsp kasuri methi / dry fenugreek leaves, crushed
  • 2 tbsp coriander leaves, finely chopped
Instructions ( 1 cup =255 ml)
  • firstly, in a thick bottomed kadai heat ghee and saute 1 bay leaf and 1 tsp jeera till they aromatic.
  • further add 1 inch ginger, 1 green chilli and saute well.
  • keeping the flame on low add ½ tsp turmeric, 1 tsp chilli powder, ½ tsp coriander powder and saute for 30 seconds.
  • furthermore add 1 cup water and 1 cup whisked curd.
  • stir continuously on low flame till the curd combines well.
  • stir well keeping the flame on low else there are chance for curd to curdle.
  • now add 2 large boiled and cubed potato along with salt.
  • mix well, cover and simmer for 5 minutes or till potato absorbs flavour.
  • now add ½ tsp garam masala powder, 1 tsp kasuri methi and 2 tbsp coriander leaves. mix well.
  • finally, serve dahi aloo along with hot steamed rice or roti.

Flat Bean Curry

Ingredients 


Flat Beans 200 G
Mango 1
Spinach stem 1
Large Onion 1
Tamarind Lemon size
Salt - As needed
Sambar Powder 2 tsp

Ingredients for tempering :
 

Mustard 1 tsp
Oil 6 tsp
Dry Chilly 1
Black Gram 1 tsp
Curry leaves 1 tsp
Asafoetida - 1pinch

Method :

In a empty pan, add flat beans and fry till the smell subsides and boil well. In a vessel, add oil and given frying ingredients and let to splutter. Then add onion, salt tamarind juice and sambar powder. Chop the spinach stem into lengthwise then boil and drain the water and add into curry.
 

Then add flat beans along with water Add the chopped mango pieces in curry before remove from flame. When the curry comes thick consistency & remove the flame.

Special Cauliflower Curry

Special Cauliflower Curry

Ingredients


Small chopped onions -1/2 cup

Small cutted cauliflower – 2 Cups

Oil

Salt

Spring Onions – For Garnish

Paste for Gravy

1 large onion or small onions – 10 pieces

Ginger – 1/2inch piece

Garlic – 3 – 5 Flakes

Red Chilli Powder – 1/2tsp

2 Medium Sized tomatoes

Sugar 1/2 tsp

Garam masala powder – 1/2tsp

Vinegar – 1 tbl sp

Preparations


1. Preheat the electric tawa at 210 C.

2. Heat 1 tbl sp of oil and fry onions for 2 – 3 minutes.

3. Add Washed cauliflower, Mix gently, close the lid and cook for 3 – 4 minutes.

4. Stir in between 1-2 times.

5. When cauliflower is tender, add grinned paste, required salt and stir-fry until moisture is absorbed.

6 You will fined every thing is cooked & will have good smell.

7. Transfer in serving dish/ bowl and garnish with finely chopped spring onion tops.

7. Swiss some lime ( if required ).

8. Garnish some coriander leaves on top.

9. Serve as a curry with chappthis/ paratha/ Fluka/ lucha/ Gujrati Bhakri or we can use as topping for pizza, bread, dosa.

Variation

1. we can use spring onions instead of big onions for frying.

2. We mushrooms, panner, baby corn, potato, green beans also along with cauliflower

3. If serving with chappthis/ paratha/ Fluka/ lucha/ Gujrati Bhakri can add some water to make like gravey.

4. We can add some cashews, grated coconut for some flavors in grinding a paste

5. We can add some thick curd/ Yogurt at the end Stir is properly, You can have your own taste.
