முள்ளங்கி சட்னி !!
முள்ளங்கி சட்னி !!
முள்ளங்கியின் கிழங்கு, இலை, விதை ஆகிய மூன்றுமே மருத்துவக்குணம் கொண்டவை.
வெள்ளை முள்ளங்கி மருந்தாகவும், உணவாகவும் பயன்படுகிறது. வெள்ளை
முள்ளங்கியில் புரதம், கொழுப்பு, மாவுச்சத்து, கால்சியம், பாஸ்பரஸ்,
இரும்புச்சத்துக்கள் உள்ளன. பல்வேறு மருத்துவ குணங்கள் கொண்ட முள்ளங்கியை

தேவையானப் பொருட்கள் :

Pirandai Thogayal
Pirandai Thogayal | Chutney benefits: for Gastritis, Indigestion & Lack of Appetite:
Pirandai is a creeper that has wonderful medicinal uses and health benefits. It is called "Adamant Creeper | Devil's Back Bone | Veldt Grape" in English and it's botanical name is Cissus quadrangularris and it is called Hadjot in Hindi.
Pirandai Chutney treats all digestion related problems like gastritis, indigestion and lack of appetite. Pirandai chutney can be made in matter of minutes and tastes really good.
To make the chutney,
Take around a cup of cleaned, finely chopped pirandai.
Heat around 1.5 tbsps of sesame oil in a pan and roast 3 tbsp urad dhal, 3 dry red chillies, a small piece of asafoetida separately till golden and remove from the pan.
Now take the cut pirandai pieces in the same pan and fry well till the color of pirandai changes to pale color.
Grind the fried spices first to a coarse powder in a blender, now add fried pirandai, 1 tsp of tamarind, salt, a pinch of jaggery and grind to thick coarse paste with very little water.

You can season with mustard and curry leaves, if you prefer.
This chutney gives best results if consumed weekly twice, especially if you suffer from indigestion, gastritis or if you are a person who eats out a lot.
It is also good home remedy for piles. To eat, mix the chutney with hot rice and little bit of ghee. This pirandai chutney tastes wonderful, but make sure to fry the pirandai very well till the color changes.

INGREDIENTS:
- KOVAKKAI | TINDORA (CHOPPED) 400 gm
- RED or green CHILLIS 4
- Ginger 20 gm
- CUMIN SEEDS 1 TSP
- CHANNA DAL 1 TSP
- URAD DAL 1 TSP
- TAMARIND A SMALL GOOSE BERRY SIZE
- COCONUT(GRATED) 2 TBLSP
- SALT AS NEEDED
- ONION 1 NO
- CORIANDER LEAVES A HANDFUL
- GARLIC 2 PODS
- MUSTARD SEEDS 1/4 TSP(OPTIONAL)
METHOD:
In a pan add1 tsp oil, and throw
in the curry leaves, channa dal, urad dal, red chili, tamarind and when the
dals turn golden brown add the cumin seeds and put off the flame and allow this
to cool.
In the pan, add the kovakkai and cook it
covered in a medium flame for 6-7 minutes.
When this cools down, grind it in a
mixer along with the roasted dal mix.
Add coconut while grinding.
When 3/4 th is done,
Add finely chopped onions and coriander
leaves and grind coarsely.
Add a little of water while grinding.
If you want just temper with mustard
seeds at the last before serving.
Enjoy with hot rice smeared with oil.

Coriander chutney
During winter season fresh coriander is available at markets.
Generally coriander is used to garnish a dish, in salads and also added to the dish for its aroma.
It is also a rich source of vitamins and minerals.
Ingredients
Coriander leaves - 1 cup
Nellikkai (Amla) - 2 or 3
Thick Curd - 1/3 cup
Green chilly - 7 to 8
Small Onion - 8 to 10
Ginger small piece
Salt - 3/4 Tsp
Lemon Juice - 1 to 2 Tsp
Directions
Beat the curd and set aside.
Wash nellikkai and coriander leaves well in water.
Steam cook nellikkai in an idli maker or cooker for 8 minutes.
Remove seeds.
Take all the ingredients except lemon juice and curd.
Grind into a smooth paste.
The water content present in the leaves and onion is just enough to grind them into a smooth paste.
Finally add curd & lemon juice and make into a smooth paste.
Adjust salt and mix well.
Transfer into a serving bowl.
Garnish with coriander leaves.
An excellent side dish for idli, upma, pongal and dosai.
