This pancake recipe allows you to enjoy a healthy breakfast and eat your pancakes too.
PANCAKE RECIPE:
1 1/2 cup oats, ground into flour
1 cup almond milk
1 ripe banana
1 Tbsp coconut sugar
2 tsp baking powder
1 Tbsp lemon juice
fresh fruit of choice for layering
1. Process oats into a flour in a blender and add the remaining ingredients. Blend until the batter is well combined.
2. Let the batter rest for 5 to 10 minutes to thicken.
3. Use a really good nonstick frying pan or you may need to use a bit of cooking spray.
Heat pan on low to medium heat and cook pancakes until bubbles are forming and ends are turning golden.
Try not to flip too soon, so the pancakes flip much easier.
4. Layer with fruit and top with your choice of sweetener.
