South East Asian Recipes - Sweet Potato Ginger Soup

Sweet Potato Ginger Soup

Sweet potato is cooked with dried black dates and dried longan and lightly sweetened with brown sugar and served as dessert.

Ingredients

  • 1 About 500 grams sweet potatoes
  • 50 gram fresh ginger roots
  • 5 cups water
  • 10 dried black dates
  • 15 dried longan
  • 2 Tbsp brown sugar

Instructions

 
Peel, wash and cut the sweet potatoes into 2-inch cubes. 


If you choose not to peel the ginger, make sure you wash it clean to get rid of sands and particles. 

Pat dry and then bruise with heavy object or the back of cleaver to release flavor during cooking

Bring water to a boil. Add ginger, sweet potatoes, black dates, and dried longan. 


Lower the heat and simmer for 30 minutes or longer until the sweet potatoes are soft but not mushy. 

Add sugar and taste. 

You can serve it hot or cold
