BEETROOT PACHADI



BEETROOT PACHADI

Its very tasty and colorful dish.

Ingredients

Beetroot -1 big
Green chilli - 2
Curd - 2 cups

To grind:
Coconut grated- 1cup
Cumin seeds - half tea spoon
Green chilli - 1
Mustard - a pinch

Tampering:
Mustard
Redchilli
Curry leaves


Directions

Cut beetroot into small pieces, cut green chillies.Take pieces of beetroot,green chillies and salt in a vessel,add water and boil till it becomes soft.

Meantime grind all the ingredients other than mustard mentioned to a fine paste.

Now add mustard and just crush it along with the ground paste.

Keep the ground paste aside. add boiled beetroot and chillies to the jar and grind.( Its up to you how much it should get grinded some people like to chew the beetroot so they grind it in a way that very small pieces of beetroot remains in it) I use to grind it in a way that all the pieces get smashes and mixes well.

Now mix this ground paste with coconut paste kept aside.

Keep the mixture in stove in low flame and stir for sometime. You can taste the salt and add if u need more. Switch of the flame and keep it aside till it becomes cool.now add curd and mix well.

Tamper mustard, red chillies and curry leaves in coconut oil and mix it to the prepared gravy.

Pachadi is ready. You can have it as a side dish with fried rice, pulao etc.
