CHETTINAD CORN PANIYARAM ( SWEET & SPICY )

SERVES: 2
Prep time: 10 mins
Cooking time: 30 mins
 


Ingredients:
  • Urad dal – ¼ cup
  • White corn – ¾ cup
  • Vendayam – ½ tsp

Preparation:
  • Soak urad dal with vendayam and corn separately in water for 4 hours.
  • Grind both separately to a smooth batter. Add little rock salt.
  • Keep the flour for fermentation as we do for idli flour. (For 8 hours)

SWEET CORN PANIYARAM:

  • Crack karuppatii into powder and add very little water.
  • Now make PAAGU by heating the above mixture on stove and filter it to remove impurities.
  • Add the PAAGU to the flour little by little. Do not make the batter watery since paniyaram will shrink while cooking.
  • Heat the paniyaram pan and add little oil.
  • Pour the batter in pan and cook for 1 min in medium flame.
  • Delicious chettinad sweet corn paniyaram is ready.

MASALA CORN PANIYARAM:

  • Cut small onions and green chilli.
  • Heat tawa and toss kadugu, urad dal, onions and chilli in oil.
  • Add this to flour and follow as same as for sweet paniaram.
  • Delicious chettinad masala corn paniyaram is ready. Serve with hot spicy chutney.
