Ingredients:
- Urad dal – ¼ cup
- White corn – ¾ cup
- Vendayam – ½ tsp
Preparation:
- Soak urad dal with vendayam and corn separately in water for 4 hours.
- Grind both separately to a smooth batter. Add little rock salt.
- Keep the flour for fermentation as we do for idli flour. (For 8 hours)
SWEET CORN PANIYARAM:
- Crack karuppatii into powder and add very little water.
- Now make PAAGU by heating the above mixture on stove and filter it to remove impurities.
- Add the PAAGU to the flour little by little. Do not make the batter watery since paniyaram will shrink while cooking.
- Heat the paniyaram pan and add little oil.
- Pour the batter in pan and cook for 1 min in medium flame.
- Delicious chettinad sweet corn paniyaram is ready.
MASALA CORN PANIYARAM:
- Cut small onions and green chilli.
- Heat tawa and toss kadugu, urad dal, onions and chilli in oil.
- Add this to flour and follow as same as for sweet paniaram.
- Delicious chettinad masala corn paniyaram is ready. Serve with hot spicy chutney.
